Zucca in saor

Ingredients for 4 people
– 300g pumpkin
– Flour to taste
– Fry oil (sunflower seeds)
-2 red onions
-30g raisins
– 30g pine nuts
-1 bay leaf
-200cc Apple vinegar
-pepper in grains
Clean the pumpking, put it on the flour and fry it in the boiling oil. Filter the oil and put it in a pan with the onions that have been previously cut in small pieces. (low heat)
After 5 minutes add the vinegar and cook till it evaporates and onions soften.
Put the pumpkin in a casserole dish with onion, raisins, pine nuts, pepper in grains and bay leaf. Pour the left oil. Let the ingredients sit for a couple of hours before serving.
If you prepare everything the day before it will taste even better.
